Hashbrown Casserole

** Preheat oven to 350

12 eggs

1 tsp salt

1/2 tsp pepper

1 (12oz) can evaporated milk

Mix well / Whip eggs

1 pkg (30 oz) frozen shredded hashbrowns (8cups) – thawed

2 cups shredded cheese

1 lrg onion chopped 

OPTIONAL:

mushrooms, diced green peppers, chopped ham. cooked bacon pieces, sausage crumbles

Combine egg mixture with above ingredients.  Pour into a greased 13 x 9 x 2 pan – a disposable aluminum pan makes for easy clean up.  Bake uncovered @ 350 for 60 minutes or until a toothpick comes out clean
